Queen's Law Outdoors and Wellness Club - Goal 48!

First year law is not the most exciting time in a law student's life. It's busy, everything seems confusing and it can be very overwhelming. Now that it is behind me, I look back and although I remember the stress and anxiety what stayed with me was the rewarding and fun moments I shared with my schoolmates. I was lucky to have a year filled with a...

Hiking the Stawamus Chief in British Columbia - Spring 2013

One of my goals is to hike a mountain every summer. This wouldn't be a goal if I lived in a place with actual mountains, but I live in flat-semi-hilly Ontario. I love mountains. I grew up in Caracas, a city surrounded by enormous mountains, where the Avila is revered as our watchful patron. Moving to Southern Ontario has made me realize how much I...

California and Bicycle Wine Tour

Sorry for the hiatus, the past couple of weeks have been crazy. I transitioned from full-time work to part-time and second year of law school started. I felt super guilty about abandoning my blog temporarily but I was so excited to see all my friends back, enroll in classes and organize my life that it was hard to make time. In these past few weeks...

Recipe 9 (Goal # 33) - Arugula Pesto Fettuccine with Oven Roasted Tomatoes and Truffle Oil

This dish is pure comfort without the guilt. It is also classy enough that would impress people at a dinner party or family reunion. The strong flavors are balanced and the fresh arugula and tomato make it ideal for a warm summer night. I came up with the idea of this recipe after going for lunch at a Italian restaurant and having...

Recipe 8 (Goal #33) - Cheesy Broccoli and Quinoa Patties with Asparagus and Carrot "Fries"

I have been really bad about blogging lately, things at work and at home are crazy busy. My time has also been consumed by NetFlix because I started watching "Orange is the New Black", which completely took over my life. I have been cooking almost everyday, however some recipes are not worth blogging about. I also started drinking green smoothies...

Giving Back - Goal # 5

I am so excited to start working towards achieving Goal # 5!  I had a wonderful childhood. I was happy, healthy and blessed with the most loving parents and family a child could ever have. I always had the emotional, financial and physical support of my parents whenever I needed any help or guidance. I know I am very fortunate, and everyday...

Thousand Island Cruise and Boldt Castle!

This is quite overdue, these past couple of weeks have been really chaotic at work and at home. This trip to Boldt Castle was amazing and the perfect quick getaway!  The Story of Boldt Castle is really interesting so I am adding it here in case you are wondering why there is a German-like castle in the St. Lawrence River. "At the turn-of-the-century,...

Recipe 7 (Goal # 33) -Tuna Potato Salad with Peas and Paprika Aioli

My friend Hayley claims she doesn't like to cook, I think this is a lie because she is a wonderful baker. She complained that my recipes were too hard and took to much time. For her I decided to prepare this REALLY easy potato salad, that can stand on its own or be a wonderful side for a pot luck or large dinner.  The best part about this...

Recipe 6 (Goal # 33) - Seared Duck Breast with Mushroom/Zucchini Gnocchi

I never had duck until very recently. I am Venezuelan and this bird is not really part of our cuisine. I also like ducks alive, they are cute and adorable and my mom used to collect duck figurines. As a non-red-meat eater I also didn't venture outside of the typical birds. I think all these elements combined drew me back from ordering duck at...

Veggie Burgers! (Goal # 39)

Believe me it tastes amazing, please forgive my messiness... Veggie burgers are tough to make, trust me this was not my first attempt, and I still feel they are not perfect (expect an update!). My recipe uses a quinoa base, they are not vegan since they contain eggs and cheese and we are working on making them stay together. Although...

Running, Travelling ... Updates on Goals!

Hi Everyone,I haven't accomplished a full goal this week but I have made TONS of progress in a few:Today I ran a 10K - this was a very special race because it was the first one that G ran with me. He only did a 5K but he was amazing at it and I am so very proud of him. I did a 10k in an hour which is around 12 min more than my last 10K, but I barely...

Raspberry Cheesecake and Failed Attempts

No one is perfect, I know, however I lose sight of that in the kitchen. There is nothing I hate more than spending time and money on a recipe and it not turning out to be as planned or sometime even edible. This weekend I had 2 weddings on one night, needless to say I was rundown and exhausted. Although tired and busy I made time to cook some recipes...

Recipe 3 (Goal #33) - Kebabs and Zucchini Corn Picadillo

So it appears that I am a keener at accomplishing goals that entail eating but I swear I am working on other ones too. I bought tickets to Osheaga (goal #20), I have been doing planks and push ups everyday (up to 20 in a row!) and I am making all sorts weekend plans, the problem is that work, weddings and socializing get in the way (trivia...

Recipe 2 (Goal #33) - Cornish Hens

Cornish hens were always a mystery to me, are they chickens? hens? a small duck? I had no idea even after I purchased them. I had always seen them featured in menus at fancy restaurants and since I started shopping at Farm Boy I always saw them in the poultry fridge. One day I was browsing my favourite cooking book - Nigella Express (the best!!)...

Today is the first day of the challenge and I am super excited to begin this journey and have the support of family and friends. I already started working on many of my goals (running, cooking and planning trips).  The winner of the 18 month Moleskine day-planner is Jessica Rosenbaum! Thank you everyone that participated it, it really meant...

Lava Cake

First Goal Accomplished! Goal # 27! This lava cake was the "sweetest" way to kick off the challenge! It was so so easy to make , just melt chocolate and 1/2 a cup of butter, 2 eggs and 2 yolks, 6 spoons of flour and a cup of sugar blend it all in a mixer and bake it in separate ramekins at 425F for 13 min. I added my homemade berry jam...

Grades - do they make it in the list?

Today was a very anticipated day for me and all my classmates, we finally received grades for our 1st year law classes. Like everyone else I was anxious because everyone knows (and tells you) how important grades are for starting your career. Now after knowing my grades and after having more than 6 weeks to think about it I can say that grades...

Why am I doing this?!

Well for many reasons actually: 1) I love making lists, it gives me directions and helps with my tendencies to procrastinate. I make lists daily, for what I am doing that morning, groceries, books.. you name it I have probably made a list. 2) I have this self conscious fear of not accomplishing things, but sometimes that fears is irrational because...
